Carole Bloom is a European-trained pastry chef and confectioner, author of eleven cookbooks, food writer, cooking instructor, media chef, and spokesperson. In addition, she has worked in world-class hotels and restaurants in Europe and the United States, and has been a consultant for both new and established culinary businesses.

Carole’s most recent cookbook is Caramel (Gibbs Smith) (see Carole's Books). She also contributed to the Candy chapter for the revised edition of the American culinary classic Joy of Cooking (Scribner). Carole has written for many national magazines and online, including Bon Appétit, Fine Cooking, Food & Wine, Gourmet, Eating Well, Cooking Light, Sam's Club Source, Culinate.com, Epicurious.com, and A Million Cooks.

Carole has made many TV appearances including TODAY Show NBC, ABC World News This Morning, CNN, Better Homes and Gardens Television, and Seasonings on PBS. She speaks frequently at national and international conferences and has appearanced several times at the Chef’s Holidays in Yosemite, California. She was the national spokesperson for the American Boxed Chocolate Manufacturers Group and the Chocolate Manufacturers Association. She has also been a celebrity judge and spokesperson for Sam's Club (Walmart Stores). In addtion, Carole has been a judge and speaker at the Los Angeles and San Francisco Luxury Chocolate Salons. Also, Carole served as an expert witness in a major copyright lawsuit case regarding chocolate and cookies.

Carole is a Certified Culinary Professional (CCP) Emeritus by the International Association of Culinary Professionals (IACP), a founding member and Past-President of Les Dames d’Escoffier, San Diego Chapter, an international organization of women of achievement in the culinary industry, and a Yoga Alliance Registered Yoga Teacher (RYT) at the 200 hour level. Also, Carole holds a Bachelor of Fine Arts degree from the University of California, Berkeley.
